Ingredients
For the Miso Ramen:
- 4 cups chicken or vegetable broth
- 3 tablespoons white or red miso paste
- 8 ounces ramen noodles or wheat noodles
- 8 slices of chashu pork (thinly sliced braised or roasted pork belly)
- 2 soft-boiled eggs, halved
- 1 cup corn kernels (cooked)
- 1 cup sliced mushrooms (shiitake or button)
- 1 cup chopped scallions (green onions)
- Nori seaweed sheets (cut into thin strips)
- Sesame seeds (for sprinkling)
- 2 cloves garlic (minced)
- 1 tablespoon ginger (grated)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon mirin (Japanese sweet rice wine)
- 1 teaspoon sugar (optional, for slight sweetness)
Directions
- In a large pot, bring the chicken or vegetable broth to a simmer over medium heat.
- In a small bowl, whisk together the miso paste and a ladleful of the hot broth until smooth.
- Add the miso mixture to the pot and stir well to combine.
- Reduce the heat to low and let the broth gently simmer while you prepare the other components.
- In a separate pot, cook the ramen or wheat noodles according to the package instructions.
- Drain the noodles and rinse them under cold water to remove excess starch. Set aside.
- If using pre-cooked chashu pork, simply heat it up in a pan or microwave until warmed through.
- If preparing from scratch, sear the pork belly slices in a hot pan until browned on both sides. Then, simmer them in a mixture of soy sauce, mirin, sugar, and water for about 1-2 hours until tender. Slice before serving.
- Cook the corn kernels, either by boiling or sautéing them until tender.
- Sauté the sliced mushrooms in a bit of oil until they are softened and cooked.
- Chop the scallions (green onions) and cut the nori seaweed sheets into thin strips.
- Divide the cooked noodles into serving bowls.
- Ladle the hot miso broth over the noodles, making sure to distribute it evenly.
- Arrange the chashu pork slices, soft-boiled egg halves, cooked corn, sautéed mushrooms, chopped scallions, and nori strips on top of the noodles.
- Drizzle with a small amount of sesame oil for extra flavor.
- Sprinkle sesame seeds on top for garnish.
- Serve the Miso Ramen immediately while it's still hot
